Story Behind the Wine:
The name “Daisies & Dandelions” celebrates the eco-friendly practices we proudly implement in our vineyard. These so-called “weeds” are crucial to our ecosystem, making this wine a tribute to the balance of nature. Grown in Kongorong, one of Australia’s coolest grape-growing regions, this limited-release premium Chardonnay is a testament to a favourable growing season and meticulous selection by our winemaker Peter Douglas.
Flavour Profile:
Achieving a perfect balance, 50% of this wine underwent a second ferment, transforming its malo acids into lactic acids for a creamy mouthfeel. The other 50% was kept as a single wild ferment, preserving the crisp pink lady apple and mineral notes. The blend results in a complex, superbly balanced wine, with aromas of citrusy grapefruit, toasted nuts, and vanilla oak, along with a savoury, modern palate.
