Description
This is another small batch wine and one of 4 different shiraz styles that we make. This one is grown in a friend’s vineyard called Tapalinga, in Cowaramup in the Margaret River region. The wine has 8% of malbec blended in with the shiraz to add weight and length.
The way we handle our red ferments is very labour intensive, but the end results in terms of colour and flavour extraction is well worth the hard work. We ferment them in open topped fermenters, then pressed the wine off skins at the end of ferment using a basket press.
The wine matures for 18 months in tank, as well as about 1/3 in a mix of new to older french oak barrels.
The colour is deep plum red with purple hues. Flavours of blueberry, plums and cherries, fragrant white pepper and hints of mocha and chocolate. On the palate, the red and dark berry flavours continue, balanced by soft velvety tannins. This wine is refined and elegant in style, and it will age well for you for 8 to 10 years if desired.
