Description
This delicate salmon rosé is handmade from the ancient and beautiful Corletto Family Grenache vines that stand on the high sands where Blewitt Springs meets McLaren Flat. A treasured, sought after pocket of McLaren Vale.
The Grenache grapes were harvested on flavour ripeness alone, crushed to press and left on skins to macerate for fewer than 90 minutes. Un-pressed juice (free run) is drained from the press straight to French oak barrels and left to ferment with wild naturally occurring yeasts until dry (no, or very little remaining natural sugars are left). The wine is filtered and bottled then stored in a dark cool cellar awaiting its release.
