Description
This small batch sparkling shiraz is made following traditional champagne making practices, with the secondary ferment, which creates the glorious bubbles, occurring in the bottle that you are drinking from. It’s a blend of 90% Shiraz and 10% Viognier, and has been an incredible 6 years in the making! After 2 years maturing in older French oak barrels, the being bottled with the yeast, it’s spent another 4 years on tirage on yeast lees in the bottle before being disgorged and a cork popped in the top.
It’s named after the flocks of endangered Redtail Black Forest Cockatoos, who roast close to, and drink from our farm troughs for most of the year.
The Redtail has flavours of liquorice, blueberry, chocolate, savoury spices and hints of fragrant white pepper. On the palate, the red and dark berry flavours continue, balanced by soft velvety tannins. This wine is refined and elegant in style, with all the structure and intensity to age well.
Sparkling Shiraz is proudly an Australian wine style, and deserves a place on the Christmas lunch and dinner tables. Essential to serve it chilled!
