Description
A small batch wine made from our favourite red grape variety that we planted here in 2005. The name Elevation comes from the fact that our vineyard is at a higher elevation than many other Cabernet vineyards in the area. After fermentation, the Cabernet is basket pressed then matured for 2 years in small French oak barrels.
A small amount of malbec has been blended in just before bottling, adding weight, gravelly tannins and length to the wine.
With a deep plum purple colour, our Elevation Cabernet Sauvignon has aromas of dried mint, blueberries, loganberries, savoury black olive and dark chocolate, with a lifted flinty, chalky character that is typical of our vineyard. Complex flavours of blueberries, dark chocolate, mint and fresh blackberries unfold on the palate, complemented by fine textured grainy tannins.
It’s made in a style which will age for the next 10 to 15 years!
