Description
Whitetail is a blanc de blancs style, meaning that it is 100% sparkling chardonnay, made following traditional champagne making practices, with the secondary ferment, which creates the glorious bubbles, occurring in the bottle that you are drinking from. After 3 years on tirage, aging on the yeast lees in the bottle, it is disgorged and a cork popped in the top.
The name Whitetail comes from after the endangered Whitetail Black Cockatoos who regularly visit our farm through the year.
The colour is pale green straw. Delicate strings of bubbles rise up when poured, and the wine has a persistent mousse (foam). Aromas of brioche, pear, apple, nutty, roasted cashews and vanilla. On the palate the wine has creamy lemon and buttery, brioche flavours.
